I've been enjoying kale salads (typically, the kale is rubbed with a little oil, then dressed and mixed with a few other simple ingredients ranging from pumpkin seeds to shredded beets), typically getting better after a few hours or even the next day. I wonder if other greens take well to a similar treatment. Could you do it with collards? Swiss chard? If so, what dressing and/or other ingredients would you use?
